I'm doing a renovation on a weatherboard house from the inside, I guess I should still install sarking but how can I keep a gap between foil and batts? Especially with the old 2x3 studs?
Any ideas welcome...

You probably can't unless you install a second wall. But that does not matter so much as the timber of the studs is a reasonable insulation, especially if you regard that the studs cover just a small fraction of the wall area.
I don't know how well it would work, but one idea is concertina foil batts, with the ridges of one side touching the weatherboards, and the ridges of the other side touching bulk insulation batts.
Would concertina foil batts or aircell stapled in the gap be enough?
Do you need both bulk fill and reflective insulation? You might choose to put reflective in walls that get sun, and bulk fill in those that don't.
